Zuppa Pavese (Pavia Soup) is a traditional Italian recipe for a classic soup of eggs poached in hot beef or chicken consommé. The full recipe is presented here and I hope you enjoy this classic Italian version of: Pavia Soup (Zuppa Pavese).

Ingredients:
4 eggs
1.2l good chicken consommé or beef consommé
12 small rounds cut from a loaf of French bread
butter
freshly-grated Parmesan cheese
Method:
Melt about 4 tbsp butter in a large frying pan and use to fry the bread until lightly browned on both sides. Sprinkle over the cheese then set aside in a low oven to keep warm.
Warm the consommé in a shallow pan and when just below a simmer break the eggs, one at a time, into a saucer then carefully slide into the hot consommé. As each egg is poached to your liking remove with a slotted spoon and place in the centre of a soup plate. Strain some of the hot consommé over the top then arrange three rounds of fried bread around each and serve.
