Yoghurt Lamb Steaks with Minted Yoghurt: Classic British recipe for a barbecue dish of lamb chops marinated in spiced yoghurt served with minted yoghurt.

Ingredients:

6 lamb chump chops (about 175g each)
150ml natural Greek yoghurt
2 garlic cloves, finely chopped
1 tsp fresh root ginger, finely grated
1/4 tsp coriander seeds, crushed
1 tbsp olive oil
1 tbsp orange juice
1 tsp walnut oil
2 tbsp fresh mint, chopped
salt and freshly-ground black pepper, to taste
olive oil, for brushing

Method:

Arrange the chops in a large, shallow, non-reactive bowl. Mix together half the yoghurt with the garlic, ginger and coriander seeds. Season to taste with salt and black pepper then spoon half the mixture over the chops. Turn the chops over and spoon the remaining mixture over the top.

Cover with clingfilm (plastic wrap) and set aside to marinate in the refrigerator for 2 hours, turning occasionally.

Combine the remaining yoghurt, olive oil, orange juice, walnut oil and mint in a small bowl. Whisk with a hand whisk until thoroughly blended. Season to taste with salt and black pepper then cover with clingfilm (plastic wrap) and set aside to chill in the refrigerator.

When marinated, drain the chops and scrape off any excess marinade. Brush with olive oil and cook on a barbecue over medium-hot coals for between 5 and 7 minutes per side.

Serve immediately, with the minted yoghurt.
