Yapese Sweet Potato Fritters
Yapese Sweet Potato Fritters are a popular dish in Micronesian cuisine, known for their crispy exterior and soft, flavourful interior. These fritters are a delicious way to enjoy the natural sweetness of sweet potatoes.
Ingredients:
2 large sweet potatoes, grated
60g plain (all-purpose) flour
4 tbsp cornflour (cornstarch)
1 tsp baking powder
1/2 tsp salt
1/4 tsp freshly-ground black pepper
4 tbsp spring onions, chopped
2 eggs, beaten
Vegetable oil for frying
Method:
In a large bowl, mix together the grated sweet potatoes, flour, cornflour, baking powder, salt, black pepper, and spring onions.
Stir in the beaten eggs until the mixture is well combined.
Heat vegetable oil in a large frying pan over medium heat.
Scoop about 4 tbsp of the sweet potato mixture and carefully drop it into the hot oil, flattening it slightly with a spatula.
Fry the fritters for 3-4 minutes on each side, or until they are golden brown and crispy.
Remove the fritters from the pan and place them on a paper towel-lined plate to drain any excess oil.
