This is a classic Nigerian dish of Yam with Greens, Onion, and Okra" height="261" width="400" title="Sweet potato greens for preparing Nigerian Yam with Greens, Onion, and Okra.

Ingredients:

750g yams, peeled and cut into 3cm cubes
1 onion, chopped
225g sweet potato greens (substitute fresh spinach or kale) stemmed and chopped
125g okra, stemmed and sliced in thin rounds
60m groundnut oil
2 hot chillies, pounded to a paste
salt, to taste

Method:

Add the yams to a pot, cover with lightly-salted water and bring to a boil and continue boiling for about 5 minutes, or until the yam pieces are just tender. Drain the yam and set aside.

Heat the oil in a frying pan then add the onion and fry for about 5 minutes over medium heat before adding the chopped greens, okra, salt and chillies. Continue cooking, stirring frequently, for 20 minutes until the vegetables are soft. Add the yams to the pan and continue cooking until they are heated through. Serve immediately.
