White Chili

This is a classic twist on the traditional chili that gives a white rather than the more common red dish. Traditionally turkey meat is used, but this can be made just as easily with chicken (it's a direct substitution). This is also a great way of using up Thanksgiving, Christmas or roast dinner leftovers.
Ingredients:
1l chicken or turkey stock
3 x 400g tins pinto beans, drained
250g cooked turkey breast, shredded (or use chicken)
230g tinned diced green chillies (or lightly stew chopped green jalapeños)
1 tsp ground cumin
½ tsp garlic powder
½ tso dried oregano
pinch of freshly-ground black pepper
230g grated white cheese (eg Monterey Jack)
250ml sour cream
Method:
In a large saucepan over medium-low heat, combine the stock, beans, chicken, green chillies, cumin, garlic powder, oregano and black pepper.
Bring to a simmer and cook for 20–30 minutes, or the ingredients are heated through.
Just before serving, stir in the cheese and sour cream, cooking until cheese is melted and the ingredients are thoroughly mixed.
Serve hot.
