Végétarien Kansiyé (Vegetarian Kansiyé)
Végétarien Kansiyé (Vegetarian Kansiyé) is a traditional Guinean recipe for a classic vegetarian stew of lentils in a tomato-based sauce flavoured with spices and thickened with peanut butter. Kansiyé is a traditional Guinean stew that is typically served with rice. The more usual versions have beef as a main ingredient, but vegetarian versions with pulses and/or lentils are also commonly prepared.
Ingredients:
240g green lentils
3 tbsp oil
1 large onion, chopped
1/2 tsp salt
1/8 tsp
black pepper
1/8 tsp thyme
3 garlic cloves, minced
1 tbsp
flat-leaf parsley, finely chopped
1/8 tsp ground
cloves
240ml tomato sauce
600ml water
1 Maggi cube (or vegetable stock cube)
3 tbsp smooth peanut butter (unsweetened)
1/8 tsp bicarbonate of soda
Method:
Wash the lentils, turn into a bowl then cover with water and allow to soak for at least 2 hours. After this time rinse then and drain.
Heat the oil in a pan, add the onion, salt, black pepper, thyme, garlic, parsley and ground cloves. Fry the onions for about 5 minutes, or until softened. In the meantime, whisk together 250ml of the water with the tomato sauce until smooth. In another bowl whisk together the peanut butter with 250ml water until smooth.
Add the lentils to the pan and stir to coat in the oil then add the tomato mixture and the peanut butter mixture. Crumble in the vegetable stock and add the bicarbonate of soda. Bring the mixture to a boil then reduce to a simmer and continue cooking for about 60 minutes, or until the lentils are soft. Add more water, as necessary, during the coking period.
Serve hot on a bed of rice.
