Vary Amin'anana (Rice with Greens and Minced Beef) is a traditional Malagasy (from Madagascar) recipe for a classic one-pot dish of minced beef, rice and greens in a lightly-spiced tomato base that is served as a main course or as a breakfast, accompanied by a fried egg. Ingredients:

500g minced beef
2 tbsp oil
1 large onion, chopped
1 1/2 tbsp grated garlic
1 1/2 tbsp grated ginger
1 tsp salt
1 tsp finely chopped cayenne pepper
3/4 tsp freshly-ground black pepper
200g tinned, diced, tomatoes (with juice)
500g coarsely-chopped mixed greens (kale or collard greens, spinach and watercress)
300g rice
1.6l water

Method:

Heat the oil in a large saucepan over medium heat. Add the onion and fry for about 5 minutes or until soft and translucent. Stir in the meat, garlic, ginger, salt and cayenne pepper. Fry until the meat is browned and cooked through then add the tomatoes and greens.

Stir to combine, cover the pan and simmer over low heat for 15 minutes, or until the greens are wilted. Wash the rice and stir into the pan then add the water and 2 tsp salt. Bring to a simmer, cover the pan and cook gently for about 25 minutes, or until the rice is tender.

The mixture should be thick, but remains a little gloopy (add a little more water half way through the cooking time if it is drying too quickly). This is typically served as a kind of pottage and is often served for breakfast, accompanied by a fried egg.
