Ingredients:
1kg fish bones and trimmings washed well in cold water
1 tbsp coriander
4 spring onions (stalk only)
2 tuna steaks (cut into cubes)
50g ginger, peeled & grated
2 garlic cloves, coarsely chopped
6 pumpkin tips
6 cherry tomatoes
Salt and pepper to season
Method:
Place the fish bones and trimmings in a pan. Cover with cold water then bring to a simmer and cook for 15–20 minutes.
Strain the liquid and season well with salt and freshly-ground black pepper.
Fry the sliced ginger, chopped garlic, spring onion and coriander in a little oil for about 2 minutes, or until aromatic. Pour in 750ml of the fish stock then bring to a simmer.
In a frying pan with a little oil fry the tuna for 2 minutes. Remove and set aside. In the same pan fry the pumpkin tips and garlic for 3 minutes.
Remove and set aside then fry the cherry tomatoes for about 4 minutes.
To serve, divide the pumpkin tips between individual bowls. Add the tomato and then the tuna cubes.
Pour hot stock into each bowl and serve immediately.
