This is a tasty and colourful salad that's guaranteed to wow a loved on on Valentine's day.

Ingredients:

4 Cos (or similar) lettuce leaves (ones that form a 'cup' shape)
120g mixed small salad greens (rocket, herbs, nasturtiums etc)
35g edible flower petals (nasturtiums, marigolds, pansies, violets, calendulas, roses, daylilies, geraniums, tulips, primrose, chive blossoms, marjoram blossoms and many others, including herb flowers)
35g chopped fresh herbs (chives, basil, tarragon and parsley)
salt and freshly-ground black pepper, to taste
35g toasted pine nuts
12 baby plum tomatoes, sliced
12 baby yellow tomatoes, sliced

1 batch Champagne vinaigrette

Method:

Set aside a few of the flower petals for garnish. Combine the small salad greens, herbs and flower petals in a large bowl. Add just enough of the vinaigrette to coat the salad then season with salt and black pepper. Toss gently to combine then place the lettuce cups in the centre of serving plates.

Mounds the dressed greens and flour mix in the lettuce and top with the toasted pine nuts. Garnish with the tomato slices and the reserved flower petals. Drizzle a little of the remaining vinaigrette decoratively over everything and serve.
