Champagne Vinaigrette
Champagne Vinaigrette is a traditional British recipe for a classic, if rather extravagant, vinaigrette dressing of champagne with shallots, mustard, olive oil and tarragon leaves that's typically used as a dressing on Valentine's day. This rather extravagant vinaigrette makes an excellent dressing for that special Valentine's day salad.
Ingredients:
120ml Champagne or sparkling wine
1 tsp shallots, minced
1/4 tsp dried tarragon leaves, crumbled
2 tsp
Dijon mustard
1 1/2 tsp sugar
2 tsp fresh
flat-leaf parsley, chopped
60ml seasoned rice wine vinegar
180ml extra-virgin olive oil
salt and freshly-ground black pepper, to taste
Method:
Combine the champagne and shallots in a small saucepan over medium heat. Bring the mixture to a simmer then reduce the heat and allow to reduce to 1/3 its original volume. Take off the heat and set aside to cool.
Now whisk together the Dijon mustard, sugar, parsley and rice wine vinegar. Beat in the cooled Champagne and shallot mix. Whilst beating constantly, add the olive oil in a steady stream. Continue until all the olive oil has been incorporated. Season to taste with salt and freshly-ground black pepper then refrigerate until needed.
