Uter or Utoar is a famous Micronesian food made from a blend of boiled and mashed taro with grated coconut and sugar.

Ingredients:

500g taro corms, peeled and chopped
100g fresh coconut, grated
4 tbsp brown sugar (or to taste)

Method:

Bring a pan of lightly-salted water to a boil. Add the taro pieces and cook for about 25 minutes, until fork tender.

Drain the taro, turn into a bowl and mash with the sugar until smooth.

Start adding the grated coconut, blending with the mashed taro until the mixture is thick enough for you to shape into balls.

Using your hands, scoop portions of the mixture and shape into balls (these can be small or large depending on personal preference).

Serve warm or cold as a dessert or snack.
