Um Ali (Puff Pastry Milk Pudding)

Um Ali (Puff Pastry Milk Pudding) is a traditional Kuwaiti recipe for a classic dessert of puff pastry cooked in a milk and cream mix that's finished by oven baking with almonds and sultanas. Ingredients:

35g cooked puff pastry
1l fresh milk
3g ground cinnamon
100g sultanas
50g slivered almonds
300g whipping cream
250g sugar

Method:

Add the milk to a large pan and bring to a boil. Stir in the sugar until dissolved then add the cinnamon, sultanas and flaked almonds. Return the milk to a boil then take off the heat.

Break the puff pastry into small pieces then arrange in the base of a baking dish. Pour the hot milk over the pastry then whip the cream until stiff before piping over the top of the milk. Transfer to an oven pre-heated to 210°C and bake for 15 minutes, or until the cream begins to turn golden brown on top.

Serve hot.
