Uburobe is a traditional Burundian accompaniment made from dried cassava meal mixed to a paste with water and steamed until cooked and set. This is similar to the 'cassava sticks' prepared in West Africa.
Ingredients:
500g gari (dried cassava meal)
salt, to taste
freshly-ground black pepper, to taste
chilli powder, to taste
banana leaves or greaseproof (waxed) paper
Method:
Whizz the gari in a blender to make a coarse powder. Turn this into a bowl and mix in d salt, black pepper and chilli powder, to taste.
Add about 100ml water and set aside. Now mix in just enough more warm water to form a thick paste.
If using banana leaves heat them over a gas flame to make them supple. Place a stick-shaped piece of the dough in the centre of a banana leaf. Fold the leaf around the cassava paste to form a parcel and secure with string.
Arrange the parcels in a steamer basket (if you don't have banana leaves, use squares of greaseproof paper). Once all the cassava mixture has been used up set the steamer basket over a pan of boiling water.
Sit a lid on top and steam for 40 minutes until the uburobe are done. Serve as an accompaniment.
To use, unwrap the parcels and eat with the stew or curry of your choice.
