Turkish Menemen is a traditional Turkish recipe for a classic breakfast dish of eggs flavoured with chillies, bell peppers, onions and cheese that are part fried and part scrambled and are served with bread. This is a traditional Turkish breakfast dish that represents something like a cross between an omelette and scrambled eggs. Traditionally the dish is made and served in individual skillets.
Ingredients:
4 small tomatoes, chopped
2 small red chillies, chopped
2 small red bell peppers, de-seeded and chopped
2 small green bell peppers, de-seeded and chopped
2 onions, sliced
100g Feta cheese, crumbled
2 tbsp olive oil
freshly-ground black pepper
8 medium eggs
Method:
Add the olive oil to a large pan over medium-high heat and when hot use to cook the onions, chillies and bell peppers. Cook for about 2 minutes, stirring frequently then add the tomatoes and season to taste with black pepper. Cook for a further 5 minutes, stirring occasionally.
Meanwhile, beat the eggs in a bowl. If the pan is large then add the eggs to the vegetables all in one go. If you have a smaller pan then remove half the vegetables and cook the vegetables and eggs in two batches.
As soon as you have added the eggs to the pan crumble in the Feta cheese (only add half if you are cooking in two batches). Cook the eggs, stirring periodically, until they are done. Make certain to do not cook, otherwise the dish will be dry (you are looking for something like well-done scrambled eggs).
