Turkey Beanpot is a traditional British recipe for a classic stew of cooked turkey and red kidney beans in a tomato and onion base flavoured with chilli powder and which is an excellent way of using-up the Christmas turkey leftovers. Ingredients:
75g butter
350g onions, sliced
3 garlic cloves, crushed
50g plain flour
3 tsp chilli powder
1kg tinned tomatoes
3 tbsp tomato purée
600ml stock
salt and freshly-ground black pepper, to taste
1 tbsp Worcestershire sauce
900g cooked turkey meat, diced
425g tinned red kidney beans, drained (or any beans you prefer, or a mix)
Method:
Melt the butter in a saucepan and when the foaming has subsided use to fry the onion and garlic for about 5 minutes, or until soft and translucent.
Stir in the flour and chilli powder and cook for 1 minutes. Now add the tomatoes and tomato purée, along with the stock, salt, black pepper and Worcestershire sauce. Bring the mixture to a boil, stirring constantly then add the turkey. Bring the mixture back to a simmer and cook for 5 minutes.
Add the beans and continue simmering gently for 20 to 30 minutes, adding more stock as needed.
