This is a classic version of Sloppy Joes that works every time. The recipe works well when doubled or redoubled and is excellent for potlucks.
Ingredients:
500g minced (ground) beef
3 celery sticks, chopped
1 small onion, chopped
1/2 green bell pepper, finely diced
240ml tomato sauce
4 tbsp tomato ketchup
4 tbsp barbecue sauce
1 tbsp brown sugar
1 tsp mustard powder
1 tbsp Worcestershire sauce
1 tbsp vinegar
salt and freshly-ground black pepper, to taste
Method:
Heat a large skillet or frying pan. Add the beef, celery, green bell pepper and onion and stir-fry until the meat is nicely browned.
Strain off the excess fat (keep to make gravy if you wish) then stir in the tomato sauce, tomato ketchup, barbecue sauce, brown sugar, mustard powder, Worcestershire sauce and vinegar.
Bring the mixture to a simmer then cook, covered for about 20 minutes, stirring occasionally.
If the mixture seems 'loose' at this point, take off the cover and continue cooking gently until the mixture has dried.
Season to taste and serve on toasted buns, accompanied by french fries and coleslaw. You can also use as a topping for pizzas or a topping for hotdogs.
