Tombrown or tom brown is a Ghanaian breakfast porridge typically made with roasted maize flour that is sometimes blended with ground peanuts and/or millet.
Ingredients:
250g (2 cups) Roasted corn flour
Milk
Sugar
Honey (optional)
Salt
Nutmeg (optional)
ground Cinnamon
A pinch of ginger powder
Method:
Sift the roasted maize (corn) flour into a bowl. Whilst whisking, add just enough water to form a thick, lump-free paste.
Pour 1l (4 cups) water into a pot and bring to a boil. Whilst whisking, beat in the moistened maize flour. Still whisking, bring to a boil and continue cooking until the mixture is thick. Season with salt to taste then add your choice of nutmeg, cinnamon and ginger to spice up the porridge.
Add honey or sugar to sweeten. Take off the heat and add a little milk to thin the porridge. Divide between two bowls and serve your tom brown.
