Tiebe (Rice and Meat with Vegetables)
Tiebe (Rice and Meat with Vegetables) is a traditional Togolese (from Togo) recipe for a classic one-pot stew of rice, meat, carrots and cabbage in a chicken stock and chilli base. This is a Togolese version of the Senegalese dish known as Tiebudjen (rice and fish). In Togo, only the Wolof word 'tieb' (rice) has survived and it's typically made with meat rather than fish (though lamb and goat versions are also commonly made in Senegal). Personally I like the dish finished with a squeeze of lime juice, but the Togolese lady who showed me this version of the recipe did not add lime juice, so I give recipe exactly as I was shown it.
This is a classic, but simple dish from Togo.
Ingredients:
100g rice
4 carrots, scraped and cut into large chunks
1kg meat, cut into serving-sized pieces
1 chicken stock cube
1 white cabbage, quartered
4 whole chillies (Scotch bonnets or habaneros, stems removed)
Method:
Add the meat to a large pot, cover and place over medium-high heat. Cook without stirring for about 20 minutes, or until the meat has released its liquid and this has almost completely evaporated away.
Remove the meat with a slotted spoon and set aside.
Wash the rice, add to a pot then cover with 600ml water. Bring to a boil, cover the top of a pot with a cloth and then the lid and cook for 10 minutes. At the end of this time, stir in the meat then sit the carrots and cabbage on top.
Scatter over the whole chillies, re-cover the pot and cook for about 30 minutes, or until the water has been absorbed and the meat and vegetables are tender.
Remove the vegetables and steamed chillies and set aside. Turn the meat and rice mixture onto a serving dish, arrange the vegetables and chillies on top and serve.
This is a sharing dish and guests should chose the vegetables they like. Any who like chillies can pick a soft, steamed, chilli to crush into the rice and meat mix.
