Ingredients:
8 large red chillies
240ml water
240ml red wine vinegar
500g white sugar
Method:
Split the chillies, remove the seeds and the ribs then finely-chop the pods. Combine wit the remaining ingredients in a saucepan and bring to a simmer. Cook gently for about 25 minutes then bottle.
The sauce will keep for several weeks in the fridge and makes an excellent dipping sauce for Thai-style chicken or prawn satays.
