Just as Hot Pepper Sauce is the West African condiment of choice, the same is true of this chilli-based sauce in Thailand. Essentially it's served with everything.
Ingredients:
5 tbsp Nam Pla (Fish Sauce)
3 tbsp freshly-squeezed lemon juice
1/2 tsp sugar
2 tbsp water
15 fresh birds' eye chillies, finely chopped
6 shallots, finely sliced
Method:
Mix together the fish sauce, lemon juice, sugar and water then add the chopped chillies and sliced shallots and stir together.
