Te Bua Toro Ni Baukin (Pumpkin, Cabbage and Corned Beef Bake)
Te Bua Toro Ni Baukin (Pumpkin, Cabbage and Corned Beef Bake) is a traditional I-Kiribati recipe for a classic dish of pumpkin, cabbage and corned beef bound with flour and flavoured with powdered milk that's baked to cook. Ingredients:
120g flour
1 tsp baking powder
6 tbsp powdered milk
1 medium pumpkin (or squash), peeled, de-seeded and grated
1 small Cabbage halved lengthways and shredded
juice of 1 lemon
1 tin corned beef (or spam)
Salt and freshly-ground black pepper, to taste
Method:
Pre-heat your oven to 200°C.
Shred the corned beef or span and set aside.
Mix together the grated pumpkin and cabbage in a bowl then stir through the corned beef. Drizzle over the lemon juice.
In a bowl, whisk together the flour, baking powder, powdered milk and seasonings.
Gradually work the flour into the pumpkin, cabbage and corned beef mixture until everything is combined.
Turn the mixture into a greased baking dish and press down lightly with the back of a spatula.
Transfer to your pre-heated oven and bake for about 45 minutes, until nicely browned and cooked through.
Serve hot to accompany sausages (yes, sausages are a common thing in Kiribati due to British and Australian influences).
