Ingredients:
2 tsp Coriander Seeds
5-6 Dried Red Chillies
2 Cinnamon sticks
3 Cloves
1 tbsp Black Peppercorns
5 Green Cardamom pods
3 Black Cardamom pods
1 Bay Leaf
2 tsp Cumin Seeds
3/4 tsp Turmeric Powder
Method:
Place a non-stick pan over medium heat. Once hot, add the whole spices one to one to the pan and cook for 90s to 2 minutes until aromatic. Turn out onto a plate to cool as you toast the next spice. Be careful the spices do not burn, or they will become bitter. Toast the whole chillies until they darken.
Once all the spices have been toasted and have cooled combine with the turmeric powder in a spice or coffee grinder and render to a powder. Turn into a jar, seal and store in a cool, dark, place until needed.
