Tandoori Lamb Chops

This is one of the classic starters available in many BIR (British Indian Restaurants).

Method:

In a small bowl, mix together the tandoori marinade, lemon juice and chilli powder. Place the lamb chops in a bowl, pour over the marinade and make sure the lamb is thoroughly coated. Cover the bowl with clingfilm (plastic wrap) and set aside to marinate in the refrigerator for at least 4 hours (but preferably over night).

When ready to cook, pre-heat your grill (broiler). Bring the chops to room temperature (about 30 minutes), which helps with more even cooking. Shake off the excess marinade, then arrange the chops on a grill rack. Place under your hot grill and cook for 20-25 minutes, turning every few minutes so the lamb cooks evenly. Continue cooking until they’re done to your liking.

To cook in an air fryer, pre-heat the air fryer to 200C and cook for 15 minutes, turning the lamb over half-way through cooking. For a more char-grilled effect, brush the lamb with melted ghee at the half way point.

Once the lamb is cooked, allow to rest for a few minutes. Serve on a bed of fried onions, garnish with coriander leaves (cilantro) an accompany with lemon wedges.
