Talautu (Coconut and Pineapple Dessert) is a traditional Papuan (from Papua New Guinea) recipe for a classic dessert of coconut flesh and pineapple served topped with coconut milk. Talautu is a very typical dessert in Papua New Guinea, simply made from coconut flesh and diced pineapple covered with coconut milk.
Ingredients:
1 Coconut
1 Pineapple
Juice of 1/2 a lemon
8 tbsp Sugar
Method:
Crack open the coconut and grate some of the flesh. Use the remaining flesh to prepare coconut milk.
Mound the grated coconut flesh in the centre of your serving dishes. Peel the pineapple, cut into slices then dice the slices. Arrange the dice around the grated coconut in your serving dish.
Pour over the coconut milk until it just covers everything.
Divide the lemon juice between each dish and add 2 tbsp sugar to each serving.
