Tagine de Daurade (Tagine of Sea Bream) is a traditional Moroccan recipe for a classic stew of sea bream marinaded in lemon juice, chilli, olive and coriander that's cooked in a tagine on a bed of onions. Ingredients:
600g fillets of sea bream, cubed
juice of 3 lemons
2 onions, peeled and thinly sliced
bunch of coriander leaves, copped
1/2 tsp freshly-ground black pepper
1 tsp ground cumin
2 red chillies, minced
60g black olives, chopped
100ml olive oil
sea salt, to taste
Method:
In a bowl, whisk together the lemon juice, chillies, black pepper, olives, coriander and olive oil. Season with salt then add the sea bream pieces and toss to combine.
Cover the bowl and refrigerate for 2 hours to marinate.
Use the onion slices to cover the base of a large tagine dish (or flame-proof casserole). Add the fish pieces and pour over the marinade. Bring to a simmer, cover and cook gently for about 30 minutes, or until the fish pieces are tender.
