Table Pepper is a traditional Nigerian recipe for a classic condiment of a blend of chilli powder, ginger, thyme, Worcestershire sauce, black pepper and paprika that is oven dried, re-ground and served as a condiment. This is a classic hot chilli powder often served in Nigeria as a table condiment. The chilli powder typically used is Ata Rodo, which is both very red and quite fiery. As a result it's a very red powder. If you're making this milder make sure to mix in some Kashmiri red chilli powder to make up for the colour. I first encountered this spice blend at a point and kill place in Lagos and my local Nigerian food store sells a commercial variant.
Ingredients:
2 tbsp chilli powder (adjust the type for the strength you want, but Habanero powder has the best flavour)
1 tbsp ground ginger
1/2 tsp thyme leaves, ground
1 tbsp Worcestershire sauce
1/2 tsp ground black pepper
2 tsp paprika
Method:
Combine the Worcestershire sauce, thyme leaves, black pepper and paprika in a bowl. Place the mix in a warm oven to dry then combine in a coffee grinder with all the other ingredients.
