This speedy microwave lamb curry is designed for a microwave power setting of 1250W (for a 900W microwave, cooking time will increae to 51 minutes)

Ingredients:

500g of diced, boneless lamb, washed and patted dry
1/2 medium onion, sliced
3/4 tsp sea salt
1/2 tsp black pepper
1 tbsp paprika
1 1/2 tbsp curry powder
1/4 tsp ground cumin
1/4 tsp garam masala
6 green cardamom pods, crushed
2 bay leaves
1 medium potato, chopped
180ml of water

Method:

Place the lamb in a microwave-safe dish. Mix in all the remaining ingredients (except the water) and massage with your fingers to combine.

Transfer to your refrigerator and allow the lamb to marinate for at least 30 minutes (up to 2 hours would be even better).

Remove from the refrigerator and allow the mixture to come to room temperature for 15 minutes.

Stir in half water, cover with clingfilm, pierce a few holes with the point of a sharp knife then place in your microwave and cook on full power for 25 minutes.

After this time, remove the clingfilm and stir in the remaining water. Cover with fresh clingfilm, cut a few holes in the top then return to the microwave and cook on full power for a further 15 minutes.

Remove from the microwave, allow to rest for 1 minute to allow the heat to equalize. At this point check a piece of lamb to ensure it's tender (it should melt in the mouth). If it still seems a little tough return to the microwave and cook on full power for a further 5 minutes.

Serve hot, accompanied by rice.
