Soak the dried beans over night in a large bowl with plenty of water. The following day, drain the bans, transfer to a large pan and cover with water. Bring to a boil and cook for about 60 minutes, until tender. Drain the beans in a colander and set aside for 10 minutes to dry.
Heat the olive oil in a wok or deep frying pan. When the oil is hot add the onion and fry for about 5 minutes, or until starting to brown. Now scatter over the spices and stir fry for 1 minute, until aromatic. Add the beans and stir well to coat in the spiced oil.
Season to taste with salt and continue frying for 5 minutes until the beans are lightly coloured.
