Ful Sudani (Sudanese Ful)

In many Semitic languages, as in Sudan, ful refers to broad (fava) beans. So this is the Sudanese version of a broad (fava) bean dip that's finished with crumbled feta cheese.

Ingredients:

300g frozen (or fresh podded) broad beans
100g ripe tomatoes
100g red bell pepper, cored and finely diced
100g onion, peeled and finely diced
1 garlic clove, minced
1 chilli, minced
parsley, finely chopped
2 eggs
60g feta cheese, crumbled
salt and freshly-ground black pepper, to taste

Method:

Heat the sesame oil in a frying pan then add the tomatoes, bell pepper, onion, garlic and chilli. Bring to a simmer and cook for 20 minutes.

In the meantime, bring a pan of water to a boil. Add the eggs and boil for 5 minutes then remove with a slotted spoon and cool in a bowl of water. As soon as they are cool enough to handle peel them.

Bring another pan of salted water to a boil, add the broad beans and cook for 6 minutes then drain in a colander, return to the pot and mash until smooth. Stir in the parsley, season to taste with salt and black pepper

Serve the broad bean mash with the fried vegetables and feta
