I was shown this by a South African friend, who used to cook these on the braai at Christmas time. They make an excellent dessert whenever you cook a barbecue, but are particularly good in the Southern Hemisphere as you get all the traditional Christmas flavours without the heavyness.
Method:
Using a sharp knife cut the pears in half. With a teaspoon scoop out the cores (discard these).
Brush the cut surface of each pear with a little lemon juice (this helps prevent discolouration).
In the meantime, mix together the mincemeat and cake crumbs (or crushed amaretti biscuits). Divide the mixture between the pear halves, spooning it in so that it's mounded where the core was removed.
Place two pear halves on a large square of doubled over kitchen foil then generously dot all over with the butter. Wrap the foil up so that the pear halves are enclosed in a parcel.
Sit this foil parcel on a barbecue rack set over hot coals. Barbecue for about 25 minutes, or until the pears are tender.
Transfer the pears to individual serving plates and serve with 2 scoops of ice cream per serving.
The same technique can be used to cook apples, or even firm plums.
