Spicy Mexican-inspired Rice

Ingredients:

1 tbsp groundnut oil
1 large onion, finely chopped
2 garlic cloves, crushed
1 green chilli, sliced
1 green bell pepper, seeded and diced
200g basmati rice, washed and drained
1 tbsp chipotle paste
400g tin chopped tomatoes
250ml vegetable stock
handful of coriander leaves, chopped
lime wedges, to serve

Method:

Place a deep frying pan with a lid over low-medium heat. Once hot add the oil and use to fry the onion, garlic, chilli and bell pepper for 10 minutes until starting to soften. Stir in the basmati, then cook for 3-4 minutes, stirring constantly.

Mix in the chipotle paste and cook, stirring for a couple of minutes until fragrant, then add in the the tinned tomatoes )with their juice) and vegetable stock, stirring well to combine.

Bring to a simmer then reduce the heat to low. Secure the lid and cook for 15 minutes or until the rice is tender and cooked through and the liquid has reduced. Stir through the coriander and serve with lime wedges for squeezing.
