Spicy Lamb Burgers: Classic British recipe for a barbecue dish of home-made spiced lamb and onion burgers that are cooked on a barbecue.

Ingredients:

1 shallot or small onion, finely chopped
1 garlic clove, peeled and finely chopped
1 tbsp fresh ginger, grated
4 tbsp coriander (cilantro) leaves, chopped
1/2 tsp ground cumin seeds
1/2 tsp ground coriander seeds
1/2 tsp ground cinnamon
1/2 tsp hot chilli powder (or to taste)
generous pinch of ground cardamom seeds
500g minced (ground) lamb
2 tbsp grape seed oil or sunflower oil
salt and freshly-ground black pepper, to taste

Method:

In a bowl, mix together the shallot, garlic, ginger, herbs and spices in a large bowl. Add the lamb and mix the ingredients together with your hands.

Divide the resultant mixture into eight even-sized pieces. Gently shape each portion into a round and flatten with your hands into a thick patty about 8cm in diameter.

Arrange on a plate, cover with clingfilm (plastic wrap) and chill in the refrigerator for 30 minutes.

Sit the burgers on a greased barbecue rack set over hot coals and cook for about 4 to 6 minutes per side, or until cooked to your liking.

Serve the burgers topped with sliced red onions and serve on slices of bread with plenty of salad and a sweet chilli sauce.
