This is a really quick and healthy soup that can be served as a first course (ie a soup) or it can be served as a quick supper with plenty of crusty bread. It also works as a working lunch, packed into a flask.
Ingredients:
1 tbsp olive oil
1 large onion, finely chopped
1 garlic clove, crushed
1 tbsp tomato purée
1 tsp chilli powder (mild or hot, depending on preference)
½ tsp ground cumin
400g (14 oz) tin chopped tomatoes
500ml (2 cups) vegetable stock
400g (14 oz) tin mixed beans, drained and rinsed
1 red bell pepper, de-seeded and cut into chunky dice
tortilla chips, to serve
4 lime wedges, to serve

Method:

Heat the oil in a deep saucepan and when hot use to fry the chopped onion over a medium heat until tender. Add the garlic and tomato purée, stirring for 1-2 minutes until combined. Sprinkle in the spices and cook for another 1 minute.

Tip in the tin of chopped tomatoes, half fill the tin with water then add to the pan. Pour in the stock, bring to a simmer over medium heat and cook, uncovered, for 10-15 mins. Season, then whizz using a hand blender until smooth. Add the beans and red red pepper, then cook for another 15 minutes until the bell pepper is tender.

Serve in bowls topped with a small pile of tortilla chips and a lime wedge.
