These are patties made with lamb and flavoured with light Indian-style spices that are excellent for an outdoor meal.
Ingredients:
500g (1 lb) minced (ground) lamb
1 tbsp black mustard seeds
4 tbs white mustard seeds
2 spring onions, chopped
2 tsp garam masala
Sea salt and freshly-ground black pepper, to taste
For the Cucumber Yoghurt:
250g (1/2 lb) cucumber, coarsely grated
4 tbsp strained yoghurt
8 mint leaves, finely chopped
Dash of white wine vinegar
To Serve:
8 soft burger buns
Cos lettuce
Sliced cucumber
Pickle (lemon/gherkin)
Method:
In a bowl, mix together the lamb, mustard seeds, sesame seeds, spring onions and garam masala. Season liberally with salt and freshly-ground black pepper then mix thoroughly to combine. Divide into eight equal pieces and flatten between your palms into rough disks about 4cm (2 in) in diameter.
Heat a little oil in a shallow non-stick frying pan. Add the patties and fry in batches for about 90 seconds per side, or until patchily golden.
For the cucumber yoghurt mix together the grated cucumber, yoghurt, mint and vinegar in a bowl. Season lightly.
Serve the patties in a bun with lettuce, cucumber and pickle and topped with the cucumber yoghurt.
