Spiced Guinea Fowl Peppersoup is a traditional Nigerian recipe for a classic spiced soup (a stew served with pounded yam or fufu) made from guinea fowl cooked with onions, hot chillies and pepper soup spices in a water base thickened with ground crayfish. Wash the guinea fowl pieces thoroughly then place in a pan with about 500ml of the water (or stock), onion, garlic and chillies. Season with salt to taste then bring to a boil and cook for 30 minutes.
Stir in the pepper soup spices at this point then add the remaining water (or stock). Return to a boil and continue cooking for a further 40 minutes, or until the guineafowl is tender.
Stir in the ground crayfish and the mint leaves then reduce to a simmer and cook for 10 minutes.
Adjust the seasonings to taste then ladle into warmed soup bowls and serve immediately.
