Ingredients:

1.5kg jointed guineafowl
2l water or stock
1 onion, chopped
1 garlic clove, crushed
50g habanero chillies, chopped
salt, to taste
100g Pepper Soup Spices
50g ground, dried, crayfish (or dried prawns, ground)
50g mint, chopped

Method:

Wash the guinea fowl pieces thoroughly then place in a pan with about 500ml of the water (or stock), onion, garlic and chillies. Season with salt to taste then bring to a boil and cook for 30 minutes.

Stir in the pepper soup spices at this point then add the remaining water (or stock). Return to a boil and continue cooking for a further 40 minutes, or until the guineafowl is tender.

Stir in the ground crayfish and the mint leaves then reduce to a simmer and cook for 10 minutes.

Adjust the seasonings to taste then ladle into warmed soup bowls and serve immediately.
