This is a classic dish of barbecued prawns served with a fiery tomato and chilli sauce. The recipe is based on an original from the Basque region of Spain
Spanish Prawns: Classic British recipe for a barbecue dish of prawns barbecued on skewers that are served with a fiery tomato and chilli sauce.
Ingredients:
1 bunch flat-leaf parsley
36 large, raw prawns, peeled, but with the tails left on
4 tbsp olive oil
lemon wedges, to garnish
For the Sauce:
6 fresh red chillies
1 onion, chopped
2 garlic cloves, chopped
500g fresh tomatoes, chopped
3 tbsp olive oil
pinch of sugar
salt and freshly-ground black pepper, to taste
Method:
Finely chop 2 tbsp of the parsley and set aside.
For the sauce, finely chop the chillies and place in a food processor with the onion and garlic. Process until finely chopped then add the tomatoes and olive oil then process to a purée.
Turn the mixture into a saucepan set over very low heat. Stir in the sugar, then season to taste with salt and black pepper. Bring to a gentle simmer and cook, without boiling, for 15 minutes.
Turn the sauce into an earthenware bowl and set on the side of your barbecue to keep warm.
Rinse the prawns and pat dry. Mix the chopped parsley and olive oil in a dish then add the prawns and toss well to coat.
Place the dressed prawns on a barbecue over medium-hot coals. Cook for 3 minutes per side, or until the prawns have just turned colour. Transfer to a plate, garnish with the lemon wedges and serve accompanied by the sauce.
