Soupe de Porc Fume (Smoked Pork Soup)
Soupe de Porc Fume (Smoked Pork Soup) is a traditional Burkinabe recipe (from Burkina Faso) for a classic stew of smoked pork in a tomato, onion and hot chilli pepper base. Note that this is a West African 'soup'. Basically a thick stew intended to be served with fufu or maize porridge or millet porridge.
Ingredients:
675g smoked pork
1 onion, chopped
2 red bell peppers, cored and sliced into strips
500ml passata (sieved tomatoes)
2 tbsp tomato purée
1 hot chilli, finely chopped
1 Maggi cube
2 garlic cloves, chopped
salt and freshly-ground black pepper, to taste
oil for frying
Method:
Heat oil in a large pot, add the onion and bell peppers and fry for about 5 minutes, or until browned.
Add the passata and tomato purée and bring to a boil. Cook for 5 minutes then add a little water to thin the sauce. Add the chilli, Maggi cube, garlic and season with salt and black pepper.
Cut the pork into cubes, add to the stew, then cook briskly for about 10 minutes. Reduce to a gentle simmer, cover and cook for 20 minutes, or until the pork is tender.
Serve hot, accompanied by fufu or maize or millet porridge.
