This is a classic Djiboutienne soup that's typically served to end the day's fast at Ramadan.

Ingredients:

500g mutton, cut into small pieces
500g potatoes, washed, peeled and finely diced
2 onions, peeled and finely diced
1 small cabbage, finely shredded (I like savoy)
2 leeks, finely shredded
2 tomatoes, finely diced
2 garlic cloves, finely chopped
1 hot chilli, finely chopped
salt
coriander leaves

Method:

Place the meat in a large pot, cover with heavily-salted water, bring to a boil and cook over medium heat for 20 minutes. Drain the meat then place back in the pot along with all the vegetables. Add enough fresh water to cover the ingredients and season to taste with salt.

Bring to a boil, reduce to a simmer, then cover the pot and cook for about 30 minutes, or until all the ingredients are tender. Turn into a bowl and serve garnished with chopped coriander.
