Soupe De Pesach (Passover Soup) is a traditional Moroccan recipe for a classic cardoons, kohlrabbies and carrots with beef in a herbed stock finished with matzoh bread which originates in the Moroccan Jewish community. This is another of the classic dishes sourced from the Moroccan Jewish population.The main ingredient here is the cardoon, a thistle-like plant which is member of the Aster family, It is a naturally occurring variant of the same species as the Globe artichoke, and has many cultivated varieties. It is native to the Mediterranean, where it was domesticated in ancient times. The stalks, which look like large celery stalks, can be served steamed or braised and have an artichoke-like flavour. Cardoon stalks can be covered with small, nearly invisible spines that can cause substantial pain if they become lodged in the skin. Several spineless cultivars have been developed to overcome this, but care in handling is recommended for all types.

Ingredients:

3 cardoon stalks, cut into 12mm cubes
3 kohlrabies, cut into 12mm cubes
5 carrots, cut into 12mm cubes
3 tbsp fresh parsley, chopped
3 tbsp fresh coriander, chopped
450g beef chuck steak, sliced into thin 5cm pieces
1/2 tsp freshly-ground black pepper
1 tsp sea salt, or to taste
1 tsp paprika
1.2l water
3 sheets matzoh bread, broken into 3cm square pieces

Method:

Combine all the ingredients (except the water and matzoh bread) in a pan. Steam gently over low heat for about 10 minutes, shaking the pan vigourously from time to time. Add the water, bring to a boil hen reduce to a low simmer, cover and cook for 1 hour, or until the meat is tender.

Place the matzoh pieces on top of the soup then re-cover the pan and simmer for 10 minutes without stirring. Serve hot.
