Sofrito

Sofrito is a traditional Spanish recipe for a classic base tomato sauce made from a blend of tomatoes, chilli, onion, garlic, olive oil and paprika that can be served on its own, but is more typically used as the base for other recipes. This is a classic base tomato sauce that is made all over Spain (and Spanish countries in the Caribbean). It can be served as it is with rice and eggs, but is more commonly used as a base sauce for other dishes (such as empanada fillings).

Ingredients:

900g tinned, crushed, tomatoes
1 long chilli (any mild kind, Anaheim, Cayenne etc), chopped into 5mm pieces
1 yellow onion, peeled and finely chopped
1 garlic clove, finely chopped
extra-virgin olive oil (Spanish, of course)
1 tsp sweet paprika
salt and freshly-ground black pepper, to taste

Method:

Heat a large heavy-based frying pan over medium heat. When hot pour in just enough olive oil to cover the base of the pan.

Add the onions and fry until translucent (about 5 minutes) then add the green chilli pieces and cook gently, stirring frequently, for another 5 minutes. Now add the minced garlic and fry for 1 minutes before adding the the tomatoes (with juice) and the paprika. Stir to combine then season to taste.

Bring to a simmer and cook for between 12 and 15 minutes, or until the sauce has thickened.
