This is a really interesting Canadian recipe for a sweet and salty seaweed infused vinegar.
Method:
Combine all the ingredients except the vinegar in a sterilized and warmed 1l jar. Pour the vinegar into a saucepan and heat to just below boiling. Take off the heat and immediately pour over the seaweed in the jar.
Secure with a vinegar-proof lid and set aside in a cool, dark, place for 2-3 weeks to infuse. During this time invert and shake the jar every day.
At the end of the time strain the vinegar through a fine-meshed sieve into clean bottle or glass containers. Seal securely and store in a cool, dark, place (preferably below 18°C) where they will keep, unopened, for up to 6 months.
Once opened store in your refrigerator.
