Schug (Middle Eastern Hot Pepper Dip)

Schug (Middle Eastern Hot Pepper Dip) is a traditional Middle Eastern recipe (also known as Skug, Zhug, Zhoug) for a classic dip or sauce base of coriander, spices, garlic and green chillies rendered to a puree. Ingredients:

1 bunch of fresh coriander, chopped
2 tsp freshly-squeezed lemon juice
3 tbsp extra-virgin olive oil
3 garlic cloves, chopped
1 tsp salt
1 tsp ground cumin
1 tsp ground cloves
3 fresh, green, chillies, chopped

Method:

Combine the coriander, garlic, salt, cumin, cloves and chillies in a blender. Add the lemon juice and olive oil then process until smooth.

Scrape the schug blend into a serving bowl. If desired, you can cover with clingfilm and store in the refrigerator for a few hours for the flavours to mature before serving.

This is typically used as a dip, but can also be used as the base for other sauces and dips, such as Yemeni Hilbeh.
