Schug (Middle Eastern Hot Pepper Dip) is a traditional Middle Eastern recipe (also known as Skug, Zhug, Zhoug) for a classic dip or sauce base of coriander, spices, garlic and green chillies rendered to a puree. The full recipe is presented here and I hope you enjoy this classic Middle Eastern version of: Middle Eastern Hot Pepper Dip (Schug).
Combine the coriander, garlic, salt, cumin, cloves and chillies in a blender. Add the lemon juice and olive oil then process until smooth.
Scrape the schug blend into a serving bowl. If desired, you can cover with clingfilm and store in the refrigerator for a few hours for the flavours to mature before serving.
This is typically used as a dip, but can also be used as the base for other sauces and dips, such as Yemeni Hilbeh.
