Also known as sazón gaya y culantro y achiote is a classic Puerto Rican spice and herb blend that is usually bought commercially. However, the commercial product has lots of MSG. So here is my attempt at making a healthier home-made version.

I go around the world collecting spices, so I have everything required in my spice store. But some of the ingredients might be hard to find, depending on where you are. I have made some suggestions as to alternatives where this is the case.

Ingredients:

2 tbsp sea salt
2 tbsp ground black pepper
2 tbsp garlic powder
2 tbsp dried and ground culantro leaves (or substitute ground coriander seeds)
2 tbsp ground cumin seeds
2 tbsp dried and crumbled oregano
2 tbsp achiote (annatto) seeds (or substitute paprika for the red flavour — though this will not substitute for the sour taste of annatto)

Method:

Simply mix all the ingredients together and use straight away. If desired, make a large batch and store in an air-tight jar. The spices will keep for several weeks.

The quantities above are enough for about two recipes.
