Sauce aux Arachides du Tchad (Chadian Peanut Sauce)

Sauce aux Arachides du Tchad (Chadian Peanut Sauce) is a traditional Chadian recipe for a classic stew of beef, onions and bell pepper in a peanut butter and tomato puree base served with rice. This classic meat-based stew comes from southern Chad.

Ingredients:

5 tbsp oil
1kg beef, cut into bite-sized pieces and dusted with plain flour
1/2 tsp freshly-grated nutmeg
1 tbsp chilli powder
4 medium onions, chopped
1 garlic clove, minced
1 red bell pepper, chopped
180ml tomato pure
1.5l water
120ml smooth peanut butter
400g cooked rice

Method:

Heat 3 tbsp of the oil in a large pot. When hot add the beef along with the nutmeg and chilli. Fry until the meat is nicely browned all over then add the onion, garlic, tomato pure, water and red bell pepper.

Bring the mixture to a simmer and cook for about 40 minutes, or until the meat is tender.

About 20 minutes into the cooking time heat the remaining oil in a pan and stir in the peanut butter. Fry for 4 minutes then gradually add into the pot with the beef.

Bring the resultant mixture back to a simmer and cook gently for 20 minutes more.

Serve hot, accompanied by rice.
