Samaki wa Kakuango (Fried Fish with Onions)

Samaki wa Kakuango (Fried Fish with Onions) is a traditional Tanzanian recipe for a classic dish of fish marinated in a rub of salt, garlic and chilli that's fried to cook and served coated with a covering of onions and tomatoes. Ingredients:

1 large (2kg fish) scaled and cleaned (any firm white fish like tilapia or kingfish)
2 tbsp salt
2 tsp fresh garlic, crushed
1 tsp finely-chopped chilli
200g onions, coarsely chopped
200g tomatoes, sliced
2 tbsp butter
6 tbsp oil

Method:

Cut gashes some 5cm apart all the way along both sides of the fish. Mix the salt, garlic and chilli and rub into the gashes along the fish's sides.

Melt the butter and oil in a frying pan, and when foaming add the fish. Cook for about 10 minutes per side, until the fish is cooked through and the skin is golden and crispy. Remove the fish and set aside to keep warm in the oven.

Meanwhile fry the onions and tomatoes in the oil remaining in the pan, cooking for about 6 minutes.

To serve, transfer the fish onto a large platter spread with boiled rice. Spread the onion mixture over the top and spoon a little of the fried butter. Garnish with lemon slices and serve.
