Australian cookery is one of the most varied and exciting in the world. The combination of cultures from all around the world has led to an amazing variety of fusion dishes. Yet, the use of native spices, long used by the native peoples has been a long time coming. This dish of seared salmon uses native Australian spices as a centrepiece.
Method
Combine all the spices together with the Scurvy-grass Salt and mix into the flour.
Dredge the fish in this then set aside to marinate for 10 minutes. Heal a little oil in a pan and when almost smoking dredge the fish in the flour once again and place in the pan. Fry on the sking side first and cook for 3 minutes then turn over and cook for 3 minutes on the other side until just done through. Serve immediately.
