Salata Lachanon (Cabbage Salad) is a traditional Greek recipe for a classic salad of green cabbage and onion in a vinaigrette dressing that's garnished with green bell pepper rings. Ingredients:
675 green (or Savoy cabbage), finely shredded (a chiffonade)
1 medium onion, grated
2 tbsp fresh parsley, chopped
80ml olive oil, or to taste
3 tbsp wine vinegar, or to taste
1 tsp sugar
salt and freshly ground black pepper, to taste
1 green bell pepper, de-seeded and sliced into thin rings to garnish (optional)
Method:
Combine the cabbage, onion and parsley in a large salad bowl. Meanwhile, whisk together the oil, vinegar, sugar, salt and black pepper in a small bowl. Pour the dressing over the cabbage mix then toss to coat.
Arrange the rings of bell pepper on top then cover and chill for at least 1 hour before serving.
