Spicy Chicken Gizzards is a traditional South African recipe for a dish of chicken gizzards fried with onion and chillies and flavoured with smoked paprika and herbs in a chicken stock base. This is a traditional South African method of cooking chicken gizzards for a quick and tasty meal.
Ingredients:
300g chicken gizzards
4 tbsp vegetable oil
1/2 onion, finely sliced
2 finger chillies, finely chopped
salt and freshly-ground black pepper, to taste
1 tsp smoked paprika
1 tsp mixed herbs
250ml (1 cup) chicken stock
Method:
Clean and wash the gizzards, removing any of the rough, yellow, internal skin that may still be adhering.
Heat the oil in a frying pan, add the onion and fry for 2 minutes then add in the gizzard. Continue frying for 3 to 4 minutes then turn the gizzards over to cook on the other side. Season with 1/2 tsp salt, plenty of freshly-ground black pepper, 1 tsp smoked paprika and 1 tsp mixed herbs. Stir well to combine.
Pour in the chicken stock, bring to a simmer, cover the pan and cook for 30 minutes, until the gizzards are tender (stir occasionally during this time to prevent the gizzards from sticking). Add the fresh chilli and stir to combine.
Continue frying, stirring constantly, for 5 minutes
Turn onto a plate and serve. This can be served as a snack with toothpicks and a cold beer or it can be served as a more substantial meal with rice.
