Rujak Brunei (Spiced Fruit Salad)

Rujak Brunei (Spiced Fruit Salad) is a traditional Brunei recipe for a classic tropical salad of cucumber and mixed fruit dressed in a sauce of peanuts, chillies, brown sugar and tamarind paste. Ingredients:

1 small cucumber, thinly sliced

Your choice of:
150g thinly-sliced jicama
150g ripe papaya, cubed
1 star apple (carambola, starfruit), sliced
250g ripe pineapple, cubed
1 firm green pear, cubed
1 firm, tart, apple, cubed

For the Sauce:
3 tbsp dry-roasted peanuts
2 hot red chillies, sliced and de-seeded
100g brown sugar
1 tbsp tamarind pulp, dissolved in 120ml hot water and strained
1 small green banana, sliced

Method:

Arrange the cucumber and your choice of 3 or 4 or the fruit in separate piles on a serving plate.

Meanwhile, chop the peanuts in a fruit processor then add the chillies and chop. Now add the brown sugar, tamarind juice and banana. Process to form a smooth paste. Transfer to a serving bowl.

Bring the fruit platter and the paste to the table separately and allow each diner to select their choice of fruit and to dip it in the sauce.

However, the modern method is to combine the fruit in a serving bowl and to toss it in with the sauce before serving.
