This is an excellent way of making a quick gravy either from pan drippings, or even better from the drippings you get from cooking a roast or chicken portions in an air fryer (never discard those juices again, turn them into gravy!). You will need a microwave safe bowl or dish for this along with a few kitchen cupboard staples and a spoon or spatula for stirring. I use a 1l Pyrex bowl.

Ingredients:

4-6 tbsp pan drippings (if you don’t have any use 5 tbsp melted butter)
4 tbsp (heaped) flour
1 tbsp soy sauce
1 tbsp Worcestershire sauce
500-600ml hot water
freshly-ground black pepper, to taste

Method:

Carefully pour the hot water into your microwave safe dish. Mix in the flour until smooth then whisk in the hot water (this really is best done with a balloon whisk). Add the soy sauce, Worcestershire sauce and black pepper.

Place in your microwave and cook on HIGH (I used an 800W microwave) for 1 minute. After this time whisk the mixture. Keep cooking and whisking 1 minute at a time until the gravy reaches your desired thickness. If it becomes too thick add a little water to thin.

Once hot and thick (about 5-6 minutes) turn into a gravy boat and serve.

For variants you can substitute wine for the water for a wine gravy. You can add a little mustard (great for pork and beef) or you can add some mint (great for lamb). Basically, how you dress up the basic gravy is up to you.
